An essential traditional dish, Axoa (pronounced "achoa") is one of the most emblematic specialties of the region. Its recipes, passed down from generation to generation, highlight exceptionally high-quality local products, especially meats.
The Traditional Beef Axoa Recipe
- Finely minced beef (a specialty of the village of Saint Pée sur Nivelle)
- Green and red bell peppers
- White onions and garlic
- Espelette pepper, added as a finishing touch for its refinement
- Red wine, to enhance the flavors
Veal Axoa remains the most renowned, but the beef version is just as flavorful.

Available in 380g or 750g jars, this dish is made in Espelette, without preservatives or additives, to guarantee complete authenticity.
