Origin of our Pata Negra:

Our 100% Iberian ham comes from the province of Salamanca, in the heart of Spain.
The name Pata Negra (meaning “black hoof”) refers to the dark color of the Iberian pigs' hooves. These animals are raised freely in the Dehesas (pastures), where they graze among majestic holm oaks.
The montanera (or “acorn season”) is a key period during which the pigs feed mainly on acorns, contributing to the richness and authenticity of the ham's taste.

Specific characteristics of Pata Negra Bellota:

Although the term Pata Negra is often used to refer to all Spanish dry-cured hams, it actually refers to a much more exclusive product. Since 2014, a charter has been established to define strict criteria for the origin, rearing, and curing of Iberian ham.

What truly distinguishes Pata Negra Bellota:

  • 100% Iberian: A ham from 100% Iberian breed pigs.
  • Bellota Qualification: The pigs are raised in the Dehesas, where they feed on acorns from holm oaks during the montanera, a decisive period for the ham's quality.
  • Color Classification:

- Black label: Pure Iberian Pata Negra Bellota.

- Red label: Bellota ham from a crossbreed of Iberian pigs (50% to 99%) with Durocs.

- Green and white labels: Spanish hams of different quality.
