Mackerel Rillettes with Mustard are delicious on a small slice of country bread or sourdough, spread generously.
Mackerel is that slender fish with black stripes and silvery-blue reflections.
Very present in the Atlantic in late summer, early autumn, fishing is ideal at this time. Its dense flesh lends itself well to making rillettes. It will delight you at aperitif time!
This recipe is made from fresh mackerel and cooked in our cannery in Espelette.
You'll find the thick texture of hand-shredded rillettes and the typical taste of mackerel enhanced by organic mustard.
Rillettes with character are spiced up with a touch of Espelette pepper, pure and simple!
