Description
- Whole ham: approximately 6 kg, ideal for large occasions or passionate connoisseurs.
- 1/2 ham: approximately 3 kg, a practical size for families.
- 1/4 ham: approximately 1.5 kg, perfect for occasional consumption or small gatherings.
Our Etxeko Ham
A ham salted and aged 15 months in our Espelette drying room, for an exceptional product.
What makes it unique:
- Melting texture and balanced taste, enhanced by notes of dried fruit and a persistent roundness on the palate.
- Prepared with carefully selected meat from the Duroc breed, renowned for its marbled meat, ideal for cured meats.
A meticulous manufacturing process:
- Selection of Duroc meat for its exceptional quality.
- Aging in three stages:
- Salting and first aging in our Espelette drying room for 8 months.
- Steaming for 45 days so that the fat perfectly permeates the muscle.
- Classic aging for 5 to 6 months for a complete development of flavors.
- 15 months in total to reveal an authentic and unforgettable taste.
Why “Etxeko”?
In Basque, “Etxeko” means “from home”. This name reflects our commitment and the care taken at each stage to create a flavorful ham, a true symbol of our Espelette savoir-faire.
To fully enjoy all the aromas of our ham, we recommend tasting it at room temperature.
